Dear Matt, Thank you for your interest in our blog! Dorado is a very flavorful white-flesh fish; therefore the white wine options can be taken to a higher level. Dorado is also one of our most constant catch varieties throughout the year! They put up a great fight. My first suggestion based on personal taste would be a well-rounded, medium body, Oaked Chardonnay. Oaked Chardonnay can bring additional complexity to the experience, yet un-oaked can be extra refreshing. The Oaked or Un-Oaked choice is up to you! Chile & Argentina are wonderful New World Country-Candidates to pick a Great-Value Chardonnay from. Australia & the United States are terrific New-World producers of these wines as well.
